Ingredients:

  • 1.5 kg of pork (ham, loin);
  • Freshly ground black pepper;
  • Salt;
  • 4 garlic cloves;
  • 2 teaspoons rosemary
  • 500 g of broth;
  • 1 tablespoon of soy sauce

Sauce Ingredients:

  • 300-400 g of broth;
  • 5 tablespoons of flour;
  • 100 g of red or white wine;
  • 200-300 g of heavy cream;
  • Salt;
  • Freshly ground black pepper;
  • 2 tablespoons of blackcurrant jelly.

Preparation:

  1. First you need to preheat the oven to 170 degrees temperature. Prepare the meat (wash and remove excess streaks and films) and rub a piece with salt and pepper. After that, you need to cut the cloves of garlic longitudinally into 2-3 cloves.
  2. Make several cuts in the piece of meat as close to the bone as possible. Chopped garlic cloves should be placed in these grooves. Sprinkle the pork with rosemary. Place the pork on a wire rack over a roasting dish. Insert a thermometer into a piece of meat.
  3. Place the roast dish on the bottom of the oven. Fry for 2-2.5 hours. When pork is cooked, the thermometer should read 80 degrees. At this temperature, the pork is ready. During the last 30-35 minutes of cooking, pour the broth mixed with soy sauce over the meat. Then the meat will be very tasty and juicy.
  4. Place the meat on a board and cover with foil. Set aside.
  5. Then the sauce should be prepared. Drain the juice from the cooked meat and dilute it with broth. Then stir the flour with a very small amount of wine and add to the mixture. Interfere. Add the remaining wine and cream, boil the sauce for 5-6 minutes. Sprinkle in salt and pepper and add blackcurrant jelly to your liking.
  6. Cut the meat into slices. Place on a serving platter. You can pour a little sauce on top and serve the rest separately in a saucepan.
  7. Serve with potatoes, mixed vegetables, sauteed onions or Brussels sprouts. Semi-sweet white or red wine as a drink.
