The ancient Greeks considered rosemary to be the plant of the goddess Venus. They believed that rosemary is able to preserve eternal youth, relieve bad dreams and make a person happy. And today, the leaves and flowers of this plant are widely used in cooking as a spice that goes well with all types of meat. The name of rosemary is translated as sea freshness. This spice gives the dishes a rich, complex aroma of lemon, pine, camphor and eucalyptus.
Pork chops with risotto and rosemary
To make rosemary and risotto pork chops, you will need the following foods:
- 4 pork loin steaks;
- 8 slices of bacon;
- 2 onions;
- 1 sprig of rosemary;
- 500 ml of meat broth;
- 400 ml of white wine;
- 200 g of rice;
- 2 cloves of garlic;
- 3 tbsp. tomato paste;
- 1 tbsp. butter;
- 2 tbsp. ghee;
- 1 tbsp. dark flour sautéed;
- ground black pepper;
- salt.
Peel 1 onion, cut into cubes and simmer in butter until transparent. Then add the washed rice and sauté it with the onions. Add tomato puree or tomato paste, gradually pour in 400 milliliters of broth and 200 milliliters of white wine. Stir occasionally and cook the rice for 20 minutes.
Rinse the pork steaks and pat dry with a napkin, then sprinkle with ground pepper and salt. Wrap each steak with 2 slices of bacon and chop off with a wooden toothpick. Cut the peeled garlic cloves into thin slices. Remove the needles from the rosemary. Fry the pork on all sides in highly heated ghee. Then sprinkle with rosemary needles and garlic, continue to fry everything together for 3-4 minutes. Then put it in an oven preheated to 180 ° C for 5 minutes. After this time, remove the pork from the oven and place in a warm place.
Peel the second onion, chop finely and simmer until transparent in the fat left over from frying. Then pour in the rest of the broth and wine. Bring to a boil, boil a little and thicken with flour sautéing, for the preparation of which you need to fry wheat flour until dark brown in a dry frying pan. Then salt the sauce, sprinkle with pepper and mix well. Place the steaks and risotto fried with rosemary and garlic on plates, top with the sauce.
Fried pork with honey sauce
To prepare fried pork steaks with honey sauce, you need to take:
- 2 pork rump steaks;
- 4 medium-sized carrots;
- 2 oranges;
- 2 tsp honey;
- 2 tsp butter;
- 2 tbsp. vegetable oil;
- 4 sprigs of rosemary;
- ground black pepper;
- salt.
Cut the washed and peeled carrots into slices, fry in butter for 3 minutes. Then salt and pepper, cover, pour in a little water and simmer for another 5 minutes. Squeeze the juice out of the oranges and add to the carrots with honey. Mix everything well and simmer for another 5 minutes, no longer covering the dishes with a lid. Leave 1 sprig of rosemary for garnish, and with 3, wrap the needles and add to the carrots. Season with salt and pepper again, if necessary.
Sprinkle the washed and dried pork steaks with ground pepper and fry in hot vegetable oil on both sides, 4 minutes each. At the very end of frying, add salt to the meat. Place carrots and steaks on large plates, garnish with a sprig of rosemary.
