Insanely delicious and sweet apricot soup is cooked in just 10 minutes, which undoubtedly plays into the hands of modern hostesses. The dish turns out to be very low in calories and nutritious.
Ingredients:
- Fresh apricots - 350 g;
- Black currant - 70 g;
- Wheat flour - 2 tablespoons;
- Red soft apple - 2 pieces;
- Lemon - 1 fruit;
- Butter - 40 g;
- Cream - 60 ml;
- Honey - 2 tablespoons;
- Granulated sugar to taste.
Preparation:
- Sort the currant berries thoroughly and rinse, dry on a napkin. Wash and dry all apricots and red apples.
- Finely peel the peel from the apples, divide each into quarters and cut the core, crumble into a medium-sized cube.
- Check each apricot, divide into two parts, remove the stone. Transfer the pulp of the fruit to a sieve and rub thoroughly with a spoon.
- Put the resulting apricot pulp into a saucepan, add a small amount of cold water, send over medium heat until it boils completely, then add the apple pieces and reduce the temperature. Keep on fire for several minutes, stirring continuously.
- After the specified time has elapsed, add the required amount of wheat flour and black currant to the future soup.
- In a separate bowl, melt the pieces of butter in advance, add honey to it. Keep the mass in a bubbling state over low heat for no more than a couple of minutes.
- Combine granulated sugar with cream, beat thoroughly until a homogeneous air mass is formed.
- Transfer honey syrup and then whipped cream to the cooled apricot mass.
- Re-beat the finished soup thoroughly with a fork, without disturbing the consistency of the apples. Serve cold.
