A domestic rabbit stewed in sour cream and with pumpkin is a very tasty and delicate dish that households will surely appreciate, regardless of age.
Note that pumpkin gives the dish a whole new flavor and velvety texture.
Ingredients:
- 500 kg of rabbit meat (fillet);
- 1 onion;
- 1 carrot;
- 300 g pumpkin;
- 50 g prunes;
- 200 g sour cream;
- sunflower and olive oil;
- rosemary;
- garlic to taste;
- game spices to taste.
Preparation:
- Rinse the rabbit meat, cut into slices, add an acidic solution of water and vinegar, leave to stand for 1 hour. Then drain the water and dry the meat.
- In any container, combine two types of oil, game spices, rosemary and chopped garlic. Mix everything until smooth.
- Put all the meat in the marinade, stir it so that the spices are evenly distributed, and leave to stand for 1-2 hours.
- Wash the prunes, add hot water and leave for 20 minutes. Then drain the water and cut the prunes into small pieces.
- Peel and rinse vegetables. Cut the onion into half rings, the carrot into cubes, and the pumpkin into large cubes.
- Pour oil into the cauldron and heat it up. Put the onions and carrots in the oil, fry them until half cooked, then pour into any plate and set aside.
- Put the rabbit meat in the remaining butter (in a cauldron) and fry it until golden brown. More oils can be added as needed.
- When the meat becomes ruddy, you need to pour vegetable frying into it, add prunes and pumpkin. Mix everything, pour over sour cream, cover and simmer for 1 hour, stirring occasionally.
- While the rabbit is cooking, you need to prepare a side dish. As a side dish, it is recommended to take young potatoes, which need to be boiled, then sprinkle with chopped dill, season with salt and oil, and stir.
- Pour the finished rabbit in sour cream with pumpkin and potato garnish in portions on plates, garnish with fresh vegetables and serve.
