Translated from German, the word eintopf (eintopf) means "one pot". This is a hearty rich peasant soup, so thick that it can simultaneously be the first and second course in the "one pot". Eintopf is prepared from those products that are available: meat, chicken or fish; potatoes, cabbage and beans; noodles and cereals; vegetables and even fruits; as a rule, sausage, wieners or sausages are added to the eintopf. German housewives are free to improvise and replace some products with others. Every family has their own homemade recipes for this dish.
Instructions
Step 1
Eintopf in Swabian style
You will need:
600 grams of pork shank without bone;
200 grams of bacon;
800 grams of sauerkraut;
500 grams of potatoes;
300 grams of mushrooms;
2 pcs. carrots;
3 onions;
2 tbsp. tablespoons of tomato paste;
5 cloves of garlic;
1 liter of broth (or water).
Thinly chop the bacon, fry with the shank, transfer to a saucepan, pour over the broth and cook for 30 minutes. Pour sauerkraut with cold water, squeeze, add to the soup and cook for another hour. Peel and cut into slices onions, carrots, potatoes, mushrooms. In the fat melted from the bacon, fry the onions with carrots, then add the potatoes and mushrooms. Continue to fry, stirring occasionally, until golden brown. Pour in tomato paste, warm up. Transfer the whole frying to the soup, cook for another 20 minutes. At the end of cooking, add salt to taste, crushed garlic. Serve with sour cream.
Step 2
Eintopf with sausages and hunting sausages
You will need:
500 grams of beef for bone broth;
1 liter of water;
2 large potatoes;
2 onions;
200 grams of hunting sausages;
200 grams of salami;
500 grams of Viennese sausages;
500 grams of sauerkraut;
3 pickled cucumbers;
2 tbsp. tablespoons of tomato paste;
spices (bay leaf, pepper).
Boil beef broth and 1 liter of water; in the process of cooking, put the potatoes whole, cook until tender. Remove the meat and potatoes from the broth, separate the meat from the bones and chop finely, and mash the potatoes in mashed potatoes (to thicken the soup), put everything back into the slightly boiling broth. Chop onion, sausage and wieners, fry in a little oil, add chopped pickles, tomato paste and sauerkraut at the end of frying; you can add a little sugar, stew. Transfer the entire contents of the pan to the broth, add salt and spices, cook for 40 minutes under the lid. This soup is especially delicious the next day.
Step 3
Eintopf carrot-pear
You will need:
500 grams of pears;
4 things. potatoes;
4 things. carrots;
2 onions;
vegetable oil;
500 ml broth with pieces of meat;
salt, sugar;
spices (cloves, bay leaves, pepper).
Cut onions into rings, potatoes and pears into cubes, carrots into slices. Fry the onions in oil, add the potatoes, then the carrots and pears. Transfer everything to a boiling broth and cook for 30 minutes. Add salt, sugar and spices 10 minutes before cooking. If desired, you can put lard, crushed with garlic, into a plate before serving. Hearty and tasty!
