This dish surprisingly successfully combines the taste of smoked salmon with fresh, crispy zucchini and aromatic capers.
It is necessary
- - 620 g of pasta;
- - 535 g zucchini;
- - 365 g smoked salmon;
- - 75 ml of olive oil;
- - 115 g of capers;
- - 65 ml of white wine;
- - 535 ml of cream;
- - 20 g brown sugar;
- - salt.
Instructions
Step 1
Wash and peel the zucchini, then cut half of the zucchini into very thin strips.
Step 2
Boil water in a saucepan. Put pasta in boiling water, add quite a bit of olive oil and boil until tender.
Step 3
Two minutes before the pasta is done, add the sliced zucchini to it. Then drain the water and transfer the pasta to a separate bowl.
Step 4
Cut the remaining zucchini into small pieces. Smoked salmon (it is good if it is cold smoked) cut into thin small slices.
Step 5
Heat some olive oil in a frying pan and fry the salmon in it. Then add the chopped zucchini and capers to the pan.
Step 6
Cook until the liquid evaporates, add a little white wine.
Step 7
As soon as the liquid has boiled away, pour the cream into the pan, bring everything to a boil, reduce the heat and continue cooking until the sauce thickens. Add brown sugar at the very end of cooking.
Step 8
When the sauce is ready, transfer the prepared pasta into it and stir.
