Baked mushrooms are an incredibly tasty and satisfying dish. Moreover, there are many options for their combination with other products. Mushrooms can be baked in a frying pan, in a saucepan, in pots or on a baking sheet with meat or chicken, with cheese, sour cream and vegetables. Add a delicious gravy to the mushrooms for a flavorful and mouth-watering second course.
Porcini mushrooms baked in sour cream: a simple option
You will need:
- 1 kg of boletus,
- 50 g butter,
- 2 onions,
- 2 tbsp. tablespoons of bread crumbs,
- 3 tbsp. tablespoons of grated cheese,
- 1 glass of fat sour cream,
- salt to taste.
Cut the mushrooms into slices, peel the onion and finely chop into half rings. Place the onions and mushrooms in a deep cast iron skillet, add a few tablespoons of broth or water. Simmer mushrooms until tender.
Place the mushrooms with a slotted spoon on a greased baking sheet and top with sour cream, sprinkle with grated cheese mixed with bread crumbs fried in oil. Bake the dish in the oven for 5-7 minutes. Serve warm baked mushrooms with sour cream, sprinkled with fresh herbs.
Porcini mushrooms baked in shells
You will need:
- 50 g dried porcini mushrooms,
- 1/2 cup mushroom broth
- 1 loaf of white bread
- 100 g sour cream
- butter,
- 2 tsp flour,
- onion,
- Swiss cheese.
Step by step cooking
Before baking porcini mushrooms, boil them in plain water, strain and cut into slices. Boil a glass of the remaining mushroom broth, pour into it in a thin stream with constant stirring, half a glass of cold broth, diluted previously with 2 tablespoons of flour.
When the broth boils and thickens, add sour cream, butter, 2 teaspoons of onion, chopped and fried about golden brown. Mix everything, heat without boiling, and combine with mushrooms.
Remove the thick crusts from the loaf of white bread and cut 15-18 circles out of it to fit the rim of the shells, brush them on one side with butter. Place the clean side on a greased sheet and lightly brown in the oven.
Grease 15-18 shells with butter, sprinkle with breadcrumbs and place the mushrooms in them, cover each shell on top with a crouton, like a lid, with the more ruddy side down.
Sprinkle everything with Swiss cheese, drizzle with butter, place in the oven and gradually brown at 180 ° C. If you don't have shells, you can replace them with a large skillet by covering the mushrooms with croutons.

You will need:
- 50 g dried mushrooms,
- 7 potatoes,
- 2 onions,
- 1 egg,
- 1 tbsp. a spoonful of butter
- 1/2 cup sour cream
- 2 tbsp. spoons of dill greens,
- 2 tbsp. tablespoons of sour cream (in mushrooms),
- 2 tbsp. tablespoons of bread crumbs,
- 2 tbsp. tablespoons of vegetable oil for frying,
- salt and pepper to taste.
Cooking process in stages
Boil and slice the mushrooms before baking them in the oven. Fry the boiled mushrooms in a pan in butter, add the fried onions, sour cream, salt and pepper there.

Rinse the processed fresh mushrooms, boil them and discard them on a sieve. Leave small mushrooms like this, and chop large ones. Then fry them in oil, add onions, salt and pepper previously fried in a pan. Put 2-3 tablespoons of water in the mushrooms and simmer for 15-20 minutes.
At the end of stewing, add sour cream, ground crackers fried in butter and finely chopped herbs. Mix everything well. Grease a portioned pan with fat, sprinkle with breadcrumbs, put prepared mushrooms in it. Sprinkle with breadcrumbs again on top and bake in the oven until golden brown at 180 ° C.
Mokhoviki baked in sour cream
You will need:
- 1 kg of mushrooms,
- 50 g butter
- 2 onions,
- 60 g of hard cheese
- 1 glass of sour cream

Peel and cut the onion into strips. Prepare the mushrooms: cut them into slices, and leave the small ones intact. Put prepared foods in a saucepan, salt, pour in 2-3 tbsp. spoons of water and simmer until tender.

You will need:
- 300 g fresh or 50 g dried mushrooms,
- 1 tbsp. a spoonful of butter
- 1/2 cup sour cream sauce
- 1 tbsp. a spoonful of grated cheese
- 1 onion
- dill greens.
For the sauce:
- 2 tbsp. tablespoons of flour
- 100 g sour cream
- 2 tbsp. tablespoons of butter

- 1/2 cup canned green peas

Peel and finely chop the onion, save in oil. Wash the mushrooms, chop the large ones and add to the fried onions. Scald the tomatoes with boiling water, remove the skin, cut and fry with butter. Put fried mushrooms, tomatoes on a baking sheet, sprinkle with grated cheese and bake for 10 minutes in the oven at 180 ° C.
Mushroom casserole with rice
You will need:
- 130 g dried mushrooms,
- 1/2 cup rice
- 3 tbsp. tablespoons of butter
- 1 onion
- 1 tbsp. a spoonful of ground crackers,
- 1 tbsp. a spoonful of sour cream,
- salt and pepper to taste.
Boil the dried mushrooms in water until softened and drain. Chop the mushrooms and fry in butter. Separately fry the chopped onions and add to the mushrooms, put salt and pepper there, mix and fry everything together.
Sort the rice, rinse, put in boiling salted water and boil until tender. Then put the rice on a sieve, season with butter. The rice should be crumbly and not stick together into lumps.
Mix rice with mushrooms, add sour cream, stir and put the mass on a baking sheet, greased with butter and sprinkled with breadcrumbs. Grease the surface of the mushroom mass with egg and sour cream, sprinkle with breadcrumbs. Place the mushrooms in the oven and bake until golden brown. Serve hot with sour cream or butter.
Mushrooms baked with sausages: a homemade recipe
You will need:
- 750 g morels,
- 8 sausages,
- 200 ml of milk
- 3 eggs,
- 1 tbsp. a spoonful of mustard
- 150 grams of hard cheese
- butter,
- salt to taste.
In baked form, you can cook different mushrooms, but the earliest mushrooms - morels - are very tasty. However, this type of mushroom requires special preparation and processing at home.
Before baking the morels, peel, rinse and place in boiling water for 5-10 minutes. Then discard them in a colander and rinse again in cold or hot water. The broth from these mushrooms is unsuitable for food, it must be drained.
Cut the boiled morels and sausages into about 1 by 1 cm cubes and place together in a greased baking dish. Pour the salted milk mixed with beaten eggs and mustard over the mixture. Sprinkle everything on top with a layer of grated cheese. Place the baking sheet in the oven at 175 ° C for 45 minutes.
Serve the finished dish to the table as the main one; you can add boiled potatoes with melted butter to it.
