If you are a fan of pies and Italian food, then try making a real scrambled egg pie. Italians call it "eggbake", which literally translates to "baked eggs".
It is necessary
- For 8 servings:
- -1 stick of pork sausage
- 1/2 cup green onions
- -1 cup chopped broccoli
- 1/2 cup chopped zucchini
- -800 grams of mozzarella cheese
- 1/2 cup Parmesan cheese
- -8 eggs
- -3.5 glasses of milk
- -1 teaspoon salt
- -2 tsp greens (oregano, thyme, rosemary, tarragon, parsley)
- -Sliced tomatoes
Instructions
Step 1
Prepare a large skillet. Heat some olive oil on it.
Step 2
Fry the pork and onions. Transfer to a plate and let the fat drain off.
Step 3
Place pork sausage, broccoli and sliced courgettes (zucchini) in one layer on a baking sheet. Rub some mozzarella cheese over the first layer.
Step 4
In a large bowl, whisk eggs, milk, salt and herbs together.
Step 5
Pour the mixture from step 4 over the pie. Place the chopped tomatoes on top. Garnish with fresh parsley. Refrigerate for a couple of hours.
Step 6
Bake at 350 degrees for about an hour until the eggs are fully cooked.
Step 7
Let the cake stand for 10-15 minutes, do not cover.
Step 8
Serve hot with salsa, potatoes and hot tea.
