    • 4 smoked pork sausages;

Step 1

Dough for Italian pies can be bought ready-made, but it is better to make it yourself. To do this, prepare a deep container in which you will knead the dough, a saucepan is ideal. Mix flour and salt in it, sift the flour first with a sieve. Make a depression in the center. Crush the yeast into it. Add one part warm water and a little more flour there. Stir with a spoon. You now have a leaven. Cover the pot with a towel or lid and place in a warm place for about 15 minutes, then add the remaining water and melted lard. Now you can knead the dough. Stir it thoroughly until it stops sticking to the bottom of the container. Cover with a towel again and set aside in a warm place for an hour for the dough to fit properly.

When the dough is done, divide it into four equal portions. Form each into a ball, then roll it into a circle using a rolling pin. Cover with a towel and let sit again for an hour. Now is the time to get started with the filling. Mix ricotta cheese with eggs and add chopped parsley. Grate Parmesan on a medium grater and place in the same container. Cut the pork sausages into small cubes and the mozzarella into thin strips. Mix all ingredients thoroughly and sprinkle generously with freshly ground black pepper. The filling for the Italian pies is ready.

Spread the filling over the dough so that it covers only half of the tortilla, and cover with the other half on top and press the edges tightly. Pour sunflower oil into a deep frying pan and deep-fry the patties until golden brown. Remove the finished pies with a slotted spoon and dry on paper towels to remove excess oil. You can also bake pies in the oven. They will be ready in 20 minutes.
