Sliced steak is a great meal for dinner. Boiled potatoes, vegetables and pickled cucumbers perfectly emphasize the taste of steaks in slices. As a drink, semi-sweet red wine will be an excellent addition.
Ingredients:
- Boneless beef - 1 kg;
- Ghee butter - 2-3 tablespoons;
- Large onions - 2 pcs;
- Large carrots - 1 pc;
- Salt - 1 tsp;
- Bay leaf - 1 pc;
- White pepper - 6 grains;
- Anchovy - 4 pcs (you can take pickled sprat or herring);
- Beef broth - 400 g;
- Vinegar - 1 tablespoon
For the sauce:
- Flour - 3 tbsp;
- Water - 600 g;
- Heavy cream - 100 g;
- Salt pepper;
- Soy sauce.
Preparation:
- Before starting cooking, you need to cook meat, preferably beef broth.
- Wash the meat, if the piece is uneven, tie it with a thread.
- Wash, peel and cut onions into quarters. Peel the carrots and cut into small slices.
- Melt the ghee in a saucepan. Fry the meat on all sides. Add the onion to the fried meat and fry again with the meat. Then add other ingredients: salt, carrots, peppercorns, anchovies, white peppercorns. Pour also the meat broth and a spoonful of vinegar.
- Cover the saucepan with a lid and simmer over low heat for 1-1.5 hours. If the broth evaporates, add a little water to it.
- Transfer the cooked meat to a dish. Wrap the top with foil so that the meat does not cool down.
- Next, you need to prepare the steak sauce. To do this, the broth remaining from cooking the meat must be filtered and half a liter poured. Top up with water if necessary. Bring strained broth to a boil.
- Dry the flour and mix with a little water and add to the boiling broth, stirring constantly. Pour cream into boiling water and cook for about 5-7 minutes. Add salt and pepper to taste, a little soy sauce.
- Remove the meat from the foil and cut into thin (about 5 mm) slices, place on a heated serving dish. Pour a small part of the sauce over the slices of meat, pour the rest into a sauce bowl.
