Pickle soup is a soup that uses pickles as its main ingredient. However, you can reproduce the salty-sour taste, if desired, without using cucumbers. An alternative is pickled mushrooms or tomatoes. Groats can be used for this soup, whatever you like. Usually in classic recipes they take rice or barley, much less often millet, buckwheat or beans. We will learn the tricks to understand how to cook pickle at home.

- greens and salt;
- bay leaf - 2 pcs;
- ground black pepper;
- vegetable oil;
- sour cream;
- garlic - 3 cloves;
- sweet bell pepper;
- tomato paste - 4 tablespoons;
- parsley root - 1 pc;
- pickled cucumbers - 3 pcs;
- onions - 2 pcs;
- potatoes - 4 pcs;
- carrots - 2 pcs;
- rice groats - 2 tablespoons;
- meat - 450 g.
Instructions
Step 1
To prepare the pickle, rinse the meat in water, cut into cubes and dip in water. Bring to a boil, skim if necessary. Simmer for 5 minutes at a high boil.
Step 2
Then remove the meat and drain the water. Dip the meat in a saucepan of boiling water; there should be about 3.5 liters of water. Add parsley root and peeled onion. Do not close the cover completely. The meat must be cooked in a saucepan over low heat for an hour.
Step 3
Then remove the boiled onion and discard it. Add peeled and diced potatoes to our pickle.
Step 4
After the broth has boiled, add the washed rice and continue cooking. Heat a skillet with oil and sauté the finely chopped onion until soft. Then add the carrots, grated on a coarse grater.
Step 5
Fry the mixture until golden brown over medium heat. Add the tomato and stir, fry for another 2 minutes over low heat. Add the grated pickles along with the brine formed during the chopping. The resulting mass needs to be cooked in about 4 minutes.
Step 6
Put bay leaves, peeled garlic, bell peppers and sauteed vegetables in the pickle. Stir everything well and salt. Next, cook the soup with the lid open for 7 minutes.
