Champignons are delicious and very healthy mushrooms. Today they are firmly included in the diet, although 20 years ago they were considered a rather expensive delicacy. Mushrooms are especially useful for vegetarians, because these mushrooms replenish protein, which vegetarians often do not receive. Consider two options for mushroom salad - with fresh mushrooms and canned ones.
Canned mushroom salad
Ingredients:
- 300 g of canned mushrooms;
- 6 potatoes;
- 3 pickled cucumbers;
- 2 boiled eggs;
- mayonnaise, fresh dill.
Boil the potatoes in their uniforms, cool, peel, cut into cubes. Grind canned mushrooms and pre-cooked chicken eggs. Mix with potatoes. Cut the cucumbers into small pieces, add to the salad.
It remains to season the salad with a small amount of mayonnaise. Decorate it with fresh dill - you can not chop the greens, but tear them with your hands.
Chicken salad with mushrooms and avocado
Ingredients:
- 300 g of champignons;
- 5 avocados;
- 200 g of white chicken meat;
- half a banana;
- juice from half an orange;
- 1 kiwi;
- 50 ml of mayonnaise;
- green salad, spinach leaves, salt, white pepper, sugar, watercress sprigs.
Choose an avocado of medium ripeness, cut each fruit into halves, remove the seeds. Gently pull out the pulp, sprinkle the fruits with orange juice so that they do not turn brown.
Fry the champignons, boil the chicken. Cut the pulp of avocado, orange, kiwi, banana. Chop chicken and mushrooms too, mix everything. Cut the spinach and salad into strips, add to the salad. Mix mayonnaise with sugar, salt, pepper, season the salad with it. Fill the avocado halves with the prepared salad, garnish with watercress sprigs.
