Step 1
Wash the chicken under cold water, dry with a towel.
Step 2
Put the chicken breast side up. Use a sharp knife to pry off the skin and separate it from the breast. But don't cut it.
Step 3
Turn the chicken upside down. Repeat the operation: use a knife to separate the skin from the back from the meat.
Step 4
Break and cut the chicken legs with scissors at the joints. Do the same with the wings. Both the legs and wings must remain in the skin, but completely detached from the carcass.
Step 5
Cut off the tail of the chicken. Pull the skin off the chicken from top to bottom, as if you were pulling a stocking.
