Rice vinegar is one of the popular ingredients in Asian cuisine. This vinegar adds a recognizable flavor to the food. If for some reason you do not want or cannot buy rice vinegar in the store, then you can make it yourself at home. Rice vinegar is usually made from rice wine, but it can also be made from fermented rice.

Step 1
Soak the rice in a wide bowl of cold boiled water for four hours. After this time, strain the rice through a cloth. Refrigerate the resulting liquid in a sealed container overnight.
Step 2

Prepare a water bath or double boiler. In a double boiler, cook a mixture of sugar and rice water for about 20 minutes, heat in a water bath over low heat for about an hour. Before pouring vinegar into bottles, filter and boil it. If you want clear rice vinegar, add 1 whipped protein to 20 cups of vinegar and boil and filter again.
