- - skim milk or water 250 ml;
- - gelatin 10-12 g;
- - sweetener 3-4 g;
- - vanilla - 1 pod or 1 tsp vanilla extract;
- - optional dye;

Instructions
Step 1
Mix milk and gelatin, leave to swell for 3-10 minutes, depending on the time indicated on the gelatin package, sometimes it may take longer.

Then add vanilla, if available, flavor and color. Mix everything thoroughly and heat until the gelatin is completely dissolved. At the same time, stir constantly, but do not bring to a boil, otherwise nothing will work.

Remove from heat, add sweetener and put in a cold place to cool down (you can put it in the freezer for 2-3 minutes). Do not whip hot, otherwise everything will go bad.
Step 4
As soon as the mass has cooled down and the gelatin begins to set, pour the mass into a deep mixing bowl and begin to beat with a mixer.
Step 5
You need to beat until stable peaks, at first the mass will not want to beat, but you should not stop.
Step 6
Sometimes the mass thickens after 5 minutes, and sometimes it may take all 20. Focus on the density, much depends on the power of the mixer.
Step 7
As soon as the mass beats, quickly transfer it to a form lined with cling film in advance. This must be done quickly, since the mass quickly solidifies.
Step 8
Spread the mass over the entire surface.

Cover with foil.

Now everything needs to be put into the refrigerator until it solidifies completely.

Gently cut the finished soufflé into portioned pieces. After each cut, wipe the knife with water, otherwise the soufflé will break when cutting.
