Chicken soups are very popular dishes in their category due to the availability of products and elementary execution. They are prepared from whole poultry, its fragments or offal with the addition of vegetables and spices. Cook wings soup, it is very simple and very tasty, not to mention its high dietary qualities.
It is necessary
- For cabbage soup:
- - 5 chicken wings;
- - 1, 8 liters of water;
- - 500 g of cabbage;
- - 1 carrot;
- - 2 onions;
- - 5 cloves of garlic;
- - 2 tbsp. ketchup;
- - 1 tbsp. flour;
- - 20 g of dill;
- - salt;
- - vegetable oil
- For mushroom and noodle soup:
- - 6 chicken wings;
- - 2 liters of water;
- - 200 g of champignons or other mushrooms;
- - 150 g of egg noodles;
- - 1 onion;
- - 40 g of butter;
- - 1/3 tsp ground red pepper;
- - salt;
- For pea soup:
- - 5 smoked chicken wings;
- - 2 liters of water;
- - 150 g of split yellow peas;
- - 3 potatoes;
- - 1 carrot;
- - 1 onion;
- - salt;
- - vegetable oil.
Instructions
Step 1
Chicken Wing Cabbage Soup
Wash the wings, fold into a medium saucepan and top with water. Put them first on high heat until boiling, then reduce the temperature to a moderate level and cook the broth for 40 minutes, periodically skimming off the foam. Then remove the chicken pieces and set aside for now.
Step 2
Tear off the top leaves from the cabbage and chop it finely. Peel the onions and carrots and cut into strips. Heat vegetable oil in a frying pan, simmer cabbage in it for 3-5 minutes and transfer to a saucepan. Fry the onions with carrots until soft, pour over with ketchup, sprinkle with flour, stir well, dilute 100 ml of broth and add to the soup.
Step 3
Cook the dish for a few minutes, then add the grated garlic, chopped herbs, salt, wings and set aside the dishes. Cover it with a lid, wrap it in a towel and let the contents brew for 15-20 minutes.
Step 4
Mushroom soup with chicken wings and noodles
Prepare chicken broth, as described in the previous recipe, strain it through cheesecloth or a fine sieve, return to the pan, to the stove and boil again. Heat a skillet over medium heat, melt the butter in it and fry the chopped onions and mushrooms for 3-5 minutes, stirring occasionally with a spatula.
Step 5
Put the frying in the soup and simmer for 5-7 minutes, then dip the egg noodles into the boiling brew and bring the dish to readiness in 3-5 minutes (depending on the instructions on the package of the flour ingredient). Season with salt to taste, season with red pepper and place on a cork rack.
Step 6
Cut the wings at the joints, discard the smallest parts, immerse the rest in the soup whole, or remove the meat from the bones.
Step 7
Chicken Wing Pea Soup
Soak peas for 4 hours in cold water and rinse thoroughly. Pour it into a saucepan, add water and cook the beans for half an hour at the lowest temperature, covered with a lid. Peel root vegetables. Cut the potatoes into slices or sticks, grate the carrots on a coarse grater, chop the onion into cubes.
Step 8
Put potatoes to the peas, and after 5 minutes - whole smoked wings or chopped at the joints. Fry carrot and onion slices in vegetable oil until golden brown and stir into soup 7-8 minutes after laying the chicken. Boil it over moderate heat for another 5-7 minutes, salt.
