Such a New Year's snack is the "turret" of eggplant and cheese. It also has other virtues - it is bright, flavorful, tasty, and suitable for vegetarians.

It is necessary

  • - 2 medium eggplants;
  • - 1 red bell pepper;
  • - 1 yellow or green zucchini;
  • - 2 cloves of garlic;
  • - 1 head of red sweet onion;
  • - 1 tablespoon of capers;
  • - 2 tablespoons of olives;
  • - 25 g of purple basil leaves;
  • - 300 g of goat cheese;
  • - olive oil;
  • - salt and freshly ground black pepper.

Instructions

Step 1

Cut the eggplants into equal, thin slices. Heat the olive oil and fry the slices in one layer. As you remove each batch from the pan, place the circles on a paper tea towel to absorb the excess oil.

Step 2

Wash the pepper, remove the seeds and cut the flesh into cubes. Also chop the onion and courgette. Chop the garlic. Increase the heat under the pan in which the eggplant was fried to the maximum, add a little oil and fry the chopped vegetables, stirring occasionally, for 3-5 minutes. Add balsamic vinegar and saute until evaporated.

Step 3

Cut the tomatoes into quarters and place with the rest of the vegetables in the pan, reduce the heat to medium, and fry for another 3-4 minutes. Remove from heat, chill slightly and toss with capers, cheese, sliced olives and chopped basil leaves.

Step 4

Take small refractory bowls and line the bottom with slices of eggplant, put a layer of vegetables with cheese, then another layer of eggplant, and so on until the bowl is completely full. The last layer should be eggplant. When assembling the "turret", press on the layers so that they are dense.

Step 5

Preheat oven to 200C. Bake for 12-15 minutes, then refrigerate, place turrets on a tray, cover with cling film and refrigerate.
