Pastroma is a delicious meat delicacy that can be easily prepared at home. I suggest making this dish from chicken breasts.
It is necessary
- - chicken fillet - 2 pcs.;
- - salt;
- - paprika - 1 teaspoon;
- - coriander - 0.25 teaspoon;
- - olive oil - 3 teaspoons;
- - garlic - 1 clove;
- - black pepper - 0.5 teaspoon;
- - mustard seeds - 1 teaspoon.
Instructions
Step 1
Dry thoroughly washed chicken breasts by blotting with paper towels. Then place them in a fairly deep cup and cover with brine. For one liter of cold water, you will need 2 tablespoons of salt. Leave the chicken in this form for about 2 hours. This time is enough for the chicken fillet to be thoroughly saturated with salt.
Step 2
While the chicken breasts are in the brine, make the salamur, a spice mixture that will be used to coat the meat. To do this, combine the following ingredients in one bowl: ground black pepper, 1/4 teaspoon of salt, coriander, as well as paprika, mustard seeds and olive oil. Mix everything properly, that is, so that this mass becomes homogeneous. By the way, if you don't have olive oil, you can use vegetable oil.
Step 3
After peeling a large enough clove of garlic, chop it into thin slices. Then stuff the chicken breasts with them, taking them out of the saline solution.
Step 4
Now apply the resulting mixture of spices to the entire surface of the chicken meat. In this form, place the chicken fillet in a pre-prepared baking dish. Send it to the oven, preheated to a temperature of 300 degrees, for one quarter of an hour, that is, for 15 minutes.
Step 5
After the time has elapsed, leave the finished dish in the turned off oven for about 8-10 hours. Chicken pastroma is ready!
