Pistachios have a high calorie content, as well as a high content of minerals, vitamins, amino acids necessary for a person. They contain a lot of vitamin E, a well-known antioxidant that rejuvenates the body. Therefore, spicy rice with pistachios will turn out to be both a hearty dish and healthy at the same time.
It is necessary
- For four servings:
- - a glass of basmati rice;
- - half a glass of dried apricots, unsalted pistachios;
- - 1 orange, a bunch of mint;
- - 2 tbsp. tablespoons of grape seed oil;
- - ground cinnamon, cardamom, black pepper, salt.
Instructions
Step 1
Rinse the rice, dry it. Pour half of the oil into a deep skillet or wok and fry the rice, stirring constantly, for three minutes.
Step 2
Pour a glass of room temperature water into a frying pan, add cardamom, black pepper, salt. Stir, let it boil. Cook the rice for 20 minutes under the lid, there should be very little water left or it should evaporate completely.
Step 3
Peel the pistachios from the shell, dry in the oven for five minutes at a temperature of 190 degrees. Cool, chop coarsely enough.
Step 4
Remove the zest from the orange with a grater, squeeze the juice from the fruit. Add orange zest, juice, chopped dried apricots, cinnamon and pistachios to hot rice. Stir the dish, let it brew for ten minutes.
Step 5
Rinse a bunch of fresh mint, chop or simply tear off the leaves, mix with rice, serve spicy rice with pistachios immediately.
