Cut the fillet into portioned pieces; the pieces should not be too large.

Beat the eggs.

In a separate bowl, add salt and pepper to the sifted flour.
Step 4
Rub the parmesan on a fine grater.
Step 5
We release each piece of fillet into an egg, then into flour, then again into an egg, then into Parmesan.
Step 6
Fry the fillets in batter over medium heat in a large amount of boiling oil.
Step 7
Put the fried pieces on a sieve to allow the glass to excess oil.
Step 8
Serve the fish in batter with herbs and fresh vegetables.
