Sole fillet is no longer a delicacy. It is very tender, soft and juicy, which has rightfully won a worthy place in the hearts of both professional chefs and ordinary housewives. There are a lot of ways to prepare it, since it is a universal basis. Soups are made from it, stewed with vegetables, baked in foil. The taste of the sea tongue is perfectly emphasized by such citrus fruits as lime, lemon or tangerines. It goes well with potatoes and other vegetables. Sometimes served with cereals.

It is necessary

    • fillet of sole
    • salt
    • pepper
    • flour
    • vegetable or olive oil
    • butter
    • tangerines.

Instructions

Step 1

The preparatory stage in working with the maritime language is its defrosting. The best way to do this is to take a bag with the desired piece, put it in a small container filled with cold water, and then put it in the refrigerator for defrosting. In this case, the structure of the carcass itself will not be damaged, plus everything - this is the safest method for health, since the amount of bacteria formed will be much less than with room defrosting. Do not let the fish defrost completely, but start cooking while it is still slightly frozen. This will keep the pieces intact.

Step 2

Then cut each fillet into 2-3 pieces, depending on the size. Season with salt, pepper, roll a little in flour and fry in vegetable oil. Remember that this fish fries very quickly, so do not keep it on fire for a long time. 5-7 minutes in a well-heated frying pan, on each side, will be enough. The fried pieces must be dried, on paper kitchen towels or on napkins to remove excess fat. Quite often, this fish is not doused in flour at all, but simply fried, while pouring citrus juice on each side. But in this case, pieces may fall apart, since the fish is very tender.

Step 3

The sauce for this fish should not be spicy or too aromatic - this will suppress the delicate smell and taste of the sole itself. The ideal option would be a sauce consisting of only two ingredients - this is butter and tangerines (for 75 g of butter you will need 1, 5-2 tangerines) To prepare it, simply melt the butter and squeeze the tangerine juice into it. You can also replace tangerines with lemon, then the taste will be more familiar and simple.

Step 4

Put the fish-shaped pieces on plates, pour the sauce over them. Boiled potatoes can be used as a side dish. Steamed or grilled vegetables are also great.
