It is necessary

    • Dough:
    • semolina (9 tablespoons);
    • honey (300 g);
    • eggs (8 pieces);
    • shelled walnuts (200 g);
    • lemon zest (1 tsp);
    • cinnamon to taste.
    • Vanilla cream:
    • butter (100 g);
    • milk (200 g);
    • honey (1 tbsp. spoon);
    • yolks (2 pieces);
    • potato starch (1 tbsp. spoon);
    • vanilla sugar to taste.

Instructions

Step 1

Dough.

Pass through a meat grinder or chop the walnut kernels in a blender. Divide the mass in half.

Step 2

Separate the whites from the yolks.

Step 3

Combine the honey and egg yolks in a bowl. Add the zest, some cinnamon and half the chopped walnuts. Beat the mixture with a mixer until foamy.

Step 4

Combine the semolina with the second half of the walnuts. Pour the mixture under the mixer blades one spoon at a time.

Step 5

Whisk the egg whites until stiff. Add them in portions to the dough, just like cereals.

Step 6

Prepare a cake pan. Line the bottom with baking paper. Grease the edges with butter and sprinkle with semolina.

Step 7

Pour the dough into a mold and place in the oven over medium heat. Do not open the oven door until the base is baked. Check readiness with a wooden skewer. Stick it into the cake and pull it out, the skewer should be dry.

Cool the baked crust. Cut it into three layers. Spread cream on each piece and assemble the cake.

Vanilla cream.

Pour milk into a mixing bowl, add yolks, starch and vanilla sugar. Whisk the resulting mass. Pour it into a low saucepan and set over low heat. Stir constantly with a spoon until the cream thickens and cooks. Turn off the fire.

Step 10

Rub the softened butter and honey with a tablespoon. Add them to the boiled cream. Whisk thoroughly until stiff. Cool and coat the cake.
