At any time of the year, orange carrots are a source of vitamins and good mood. Even if your kids don't like it, they will love the delicious, easy-to-make carrot cake with walnuts.

- 200 g butter
- 150 g shelled walnuts
- 500 g carrots
- 1 tsp baking powder for dough
- 400 g flour
- 250 g sour cream
Instructions
Step 1
Take a container with high sides and put butter in it. Wait 15-20 minutes for the butter to melt slightly and soften. There is no need to melt the butter. Add 250 grams of sugar to the butter and grind it all into a single mass. Beat the eggs into the same container, mix everything well.
Step 2
Grate all carrots on a fine grater in a separate container. You can also grate carrots on a coarse grater - this will not change the taste of the cake, but the finer you rub it, the softer the cake will be. Combine the carrots with the already obtained mass.
Step 3
Grind pre-peeled walnuts in a blender or by hand. Take 3/4 of all the nuts and pour them into the dough. Stir all the ingredients.
Step 4
Now sift all the flour, baking powder into the resulting mixture and knead the dough well. The dough should turn out to be thin, the consistency of sour cream.
Step 5
Grease a baking dish with vegetable oil and place half of the dough in it. The cake will consist of two layers. Preheat the oven to 180 ° C, place the mold there. Bake the cakes one by one or at a time in two identical tins for half an hour.
Step 6
After 30 minutes, check if the cake is baked with a toothpick. To do this, pierce the cake with a toothpick and pull it out. If it is dry, then the cake is ready, if there are dough residues on it, then continue to bake the cake until cooked.
Step 7
Next, garnish the carrot with sour cream. To do this, take sour cream and beat it thoroughly with the remaining sugar until the sugar grains are completely dissolved. When the cakes have cooled slightly, place one on a serving dish and spread half of the sour cream on top. Place the second on it. Lubricate the top of the cake also generously with cream and sprinkle with chopped nut crumbs. Decorate the cake with small carrots sculpted from colored mastic if desired. This cake is best served chilled.
