Step 1

Rinse the carrots thoroughly under running warm water. Pour clean water into a saucepan and wait for it to boil. Many housewives start cooking vegetables in cold water, and this contributes to the greatest loss of vitamins and a deterioration in taste. Dip the carrots in boiling water and cook until tender. Cooking time depends on the size of the root vegetable. Usually medium carrots are cooked for 40-45 minutes. You can check the readiness with a knife, if the root crop is soft, then the carrots are ready. Then you need to carefully drain the water and cool the carrots. Using a sharp knife, peel the main ingredient.

Step 2

Let's prepare a grater or meat grinder. It is necessary to grate the carrots on a coarse grater or pass through the middle grill of a meat grinder to get a carrot mass (minced meat). Pay attention to the resulting minced meat, if it contains a lot of water, then you need to get rid of the excess. To do this, simply squeeze the resulting mass with your hands. Add 1/4 cup semolina to the minced carrot, chopped walnut kernels, salt, sugar. Mix everything thoroughly.

Step 3

We take a tablespoon and begin to shape the carrot patties. First, we roll the balls in our hands, and then shape the cutlets. Pour the remaining semolina into a separate plate and roll over the cutlets.

Step 4

Preheat the pan and add a small amount of vegetable oil. Put the cutlets in a frying pan and fry them on each side until a golden and ruddy crust is formed. Before serving, place the finished cutlets on a flat dish and garnish with herbs, sprinkle with grated nuts on top.
