A bright and original dish "vegetable omelet" will diversify breakfast and become a light dinner. Due to its colorful appearance, such an omelet will not only satisfy hunger and significantly improve mood.

- - 500 g potatoes
- - 1 bell pepper
- - 70 g sausage
- - 1 head of red onion
- - olive oil
- - 100 g green peas (frozen or fresh)
- - 6 eggs
- - ground black pepper
- - salt
Instructions
Step 1
Boil the potatoes in lightly salted water, without peeling. Cut the sausage into thin slices, onion and pepper into rings.
Step 2
After the potatoes are cooked, drain the water, peel them and cut them into small cubes. Combine all ingredients in one pan and add green peas. Fry vegetables for 10 minutes over low heat.
Step 3
When the vegetable mixture is ready, pour the beaten eggs into it and place in the oven for 15 minutes. For a better cooking experience, fry the omelet on both sides.

On the table, a vegetable omelet can be served with herbs or a side dish of fresh vegetables. Any kind of sausage can be used - ham, smoked, boiled or substituted with meat.
