It is not difficult to prepare airy cupcakes, only you will have to tinker a little with the preparation of the cream, but this is not scary - after all, the delicacy is worth it! These cream muffins can be a great substitute for your usual cakes. They can be additionally decorated with whole strawberries - both beautiful and healthy.
It is necessary
- For 12 pieces (for cupcakes):
- - flour - 200 grams;
- - sugar - 200 grams;
- - butter - 220 grams;
- - one egg;
- - two egg yolks;
- - candied cherries or strawberries - 100 grams;
- - baking powder - 1 teaspoon;
- - salt - 1/4 teaspoon.
- For the cream you need:
- - strawberries - 100 grams;
- - butter - 170 grams;
- - sugar - 130 grams;
- - two egg whites.

Step 1
Prepare the muffins first. Sift flour with baking powder and salt. Whisk butter and sugar in a separate bowl - you get a creamy consistency. Add yolks and chicken eggs, one at a time, beat after each.
Step 2
Grind candied fruits in a blender, add to the dough along with the flour mixture, mix. Divide the dough into oiled tins. Oil can be dispensed with by using paper inserts. Put in an oven preheated to 180 degrees, bake for twenty-five minutes.
Step 3
Prepare the cream. Put sugar and egg whites in a bowl, set over a saucepan of boiling water. Bring the mixture until the sugar dissolves, stirring occasionally. In this case, the temperature of the proteins should not be more than 45 degrees. You can try with your finger - the mass will be slightly warmer than body temperature. Remove the bowl from the water bath and let stand for about ten minutes. Next, beat with a mixer until soft peaks.
Step 4
Add mild butter in two steps. Whisk - the cream should be smooth and dense. Grind the strawberries in a blender, add to the cream. Whisk until smooth.
Step 5
Place the cream in a pastry bag and decorate the cooled muffins with it. Cupcakes with strawberry cream are ready to serve, enjoy your tea!
