Home-baked bread can be both tasty and healthy. One of the ingredients that will make bread more nutritious is bran. This product is useful for patients with diabetes mellitus, contains vitamins for growth and removes allergens from the body. In addition, the bran aids in digestion and weight stabilization.
It is necessary
-
- wheat flour 1 s. 630 g;
- sponge yeast 20 g;
- wheat bran 25 g;
- sunflower seeds 5 g per topping;
- sugar 5 g;
- salt 12 g;
- honey 5 g;
- milk 190 g;
- butter 50 g;
- water - about 200-250 ml.
Instructions
Step 1
Mix 20 g of yeast and 70 ml of warm water. Add 5 g of sugar, stir and place in a warm place for 20 minutes.
Step 2
For more porosity, sift the flour thoroughly, then mix it with the bran. Heat the milk to a temperature of 35-40 degrees, when it warms up enough, dissolve salt and honey in it. Heat butter to room temperature. Add milk and yeast to a bowl with flour and bran. Knead the dough for at least 20 minutes. When the dough is sufficiently kneaded, add the butter. If the dough sticks to your hands, add a little flour.
Step 3
Cover the container with the dough, leave to ferment at room temperature for 3.5 hours. Make sure there were no drafts. After an hour after the start of fermentation, gently knead the dough, after another hour, repeat this procedure.
Step 4
When the dough is done, shape into a roll. Put it in a baking dish, grease it and the loaf with butter beforehand. Let the bread sit in the mold for 50 minutes at a temperature of 30 degrees, as a result of which the dough should double in volume. Then sprinkle the crust of the future bread with water and sprinkle with seeds.
Step 5
Heat the oven to 200 degrees. Place the bread in the oven and bake at this temperature for 40 minutes.
Step 6
When the bread is ready, soak it in hot water for a couple of minutes, then immediately put it back in the oven to dry. This will make it possible to get the maximum amount of nutrients and sugary substances from the bran. Store your bread in a cool place.
