For pork chops, it's best to use a loin. When choosing meat, make sure that around it there is a layer of fat at least 0.5 cm thick. After all, the meat in the loin is quite lean, so such a layer of fat adds more juiciness to the chops.

It is necessary

  • For two servings:
  • - 400 g pork loin or 2 ready-made chops;
  • - 5 cloves of garlic;
  • - 1 lime;
  • - 1/4 bunch of cilantro;
  • - 2 tbsp. tablespoons of olive oil;
  • - 1 st. a spoonful of fried cumin, coriander seeds;
  • - ground black pepper, salt.

Instructions

Step 1

Mix coarsely ground coriander and fried cumin seeds in a coffee grinder with 1 tbsp. spoon of olive oil. Peel and chop the garlic, or use a garlic press. Add garlic to the mixture.

Step 2

Cut a piece of loin in half, beat each piece well. Sprinkle with black pepper and salt. You can buy already beaten pieces of meat.

Step 3

Brush the chops liberally on both sides with the butter and spice mixture.

Step 4

Heat oil in a skillet. The oil should start smoking, then put the pork chops in a skillet, fry over medium heat for 5-8 minutes on each side, until they are golden brown.

Step 5

Cut the lime into wedges, put on plates, roughly chop the cilantro. Place ready-made chops on a lime plate, garnish with herbs. Serve immediately. Boiled potatoes and any green salad are suitable as a side dish for pork chops.
