It is necessary

  • - 6 chops on the bone;
  • - 3/4 cup sugar;
  • - 3 tbsp. l. fish sauce;
  • - 1 stem of lemongrass;
  • - 1 chili pepper;
  • - 1 shallot onion;
  • - 5 cloves of garlic;
  • - 1/4 tsp. black pepper;
  • - sweet chili sauce.

Instructions

Step 1

For lemongrass, remove the limp top leaves, if any. If you do not know what lemongrass is and what it looks like, check out the photo that is attached in this section. Place the stem on a wooden cutting board and crush it with a meat hammer. Then cut into several pieces.

Step 2

Peel the garlic. Cut the chili into several pieces. You can remove the seeds from it if you like. Peel the shallots (see photo) and cut in half.

Step 3

Place shallots, lemongrass, garlic and chili in a blender bowl. Grind everything as small as possible to make it suitable for making a sauce. Add sugar, fish sauce and black pepper to the resulting mass. Whisk the contents of the blender again. Transfer the marinade to a separate deep bowl and stir to dissolve the sugar.

Step 4

Place the pork chops in a container in one layer. In other words, so that they lie closely next to each other, and not on top of each other. Pour the marinade over the chops. Cover the container with a lid or cling film and marinate for two hours at room temperature.

Step 5

Preheat the grill pan (see photo). Shake off excess marinade from the chops and fry on both sides until golden brown, about five to seven minutes. Serve the pork chops with sweet chili sauce.
