Duck breast stuffed with blue cheese will leave no one indifferent. The dish is easy to prepare, but it takes some time. The indicated amount of ingredients is enough for 4 servings.
It is necessary
- - duck breast (fillet) - 4 pcs.;
- - Roquefort cheese - 120 g;
- - egg - 1 pc.;
- - lemon - 1 pc.;
- - bread crumbs - 50 g;
- - flour - 100 g;
- - cognac - 2 tbsp. l.;
- - butter - 4 tbsp. l.;
- - vegetable oil - 2 tbsp. l.;
- - salt - 0.5 tsp;
- - ground black pepper - a pinch.
Instructions
Step 1
Preparing meat. Wash the duck fillet with water, cut it lengthwise (not completely with a sharp knife), unfold the breast. Lightly beat the meat, salt and pepper, pour with lemon juice. Leave it on for 10 minutes.
Step 2
Cooking the filling. Mash the cheese with a fork, mix with cognac and 2 tbsp. l. softened butter.
Step 3
Put some filling on half of the meat fillet, cover with the other half of the meat. Press well.
Step 4
Beat the egg. Gently roll the stuffed meat in flour, then moisten in an egg, then roll in breadcrumbs. The breading must be at least 5 mm thick.
Step 5
Melt the remaining butter in a skillet and fry the breast on both sides until golden brown. Then transfer the meat to a baking dish, oiled with vegetable oil, and cook in the oven for 20-25 minutes at 220 degrees. The stuffed duck breast is ready! Bon Appetit!
