Air "snowballs" are made from egg white and sugar. The dish is extremely easy to prepare. "Snowballs" are delicious and light. This dessert can be served even for small children. The original sauce will perfectly complement the dessert.

- - eggs - 4 pcs.;
- - sugar - 200 g;
- - lemon - 1 pc.;
- - vanilla sugar - 0.5 tsp;
- - apricots - 300 g;
- - water - 100 ml.
Instructions
Step 1
Turn the sugar (100 grams) into icing sugar using a coffee grinder.
Step 2
Divide the eggs into whites and yolks. Whisk the whites into a thick foam, drip a few drops of lemon juice. Add the powdered sugar to the egg white and stir gently.
Step 3
Boil milk and add vanilla sugar to it. Put the protein-sugar mixture in a tablespoon and gently dip it into the boiling milk. Submerge all the whipped protein in the milk in the same way. Boil the snowballs for 3-5 minutes, then use a slotted spoon to remove from the milk and place on a sieve.
Step 4
Cooking the sauce. Rinse the apricots with water. Divide each fruit into two halves, remove the seeds. Place the apricots in a blender bowl, add the remaining sugar and chop until puree.
Step 5
Add hot water to the apricot puree and put on fire. Bring the mixture to a boil and remove from heat. Refrigerate. The sauce is ready.
Step 6
Place a few "snowballs" on a serving plate, pour the apricot sauce over them. The dish is ready!
