Step 1

After cutting the butter into small enough square pieces, place it in a food processor along with the pancake flour, powdered sugar, and granulated sugar. Punch this mixture until a crumb-like mass is formed.

Step 2

After mixing 4 egg yolks with vanilla in a separate bowl, beat them, then add to the mixture of crumbs. Stir everything in a food processor until you have a fairly sticky homogeneous dough. Chill it in the refrigerator, wrapping it with cling film, for at least 2 hours.

Using a greased baking dish with a depth of 5 centimeters and a diameter of 20 centimeters, spread half of the chilled dough on its surface in an even layer. Place plastic wrap on top of it and tamp it down with your palms. After this procedure, remove the film and apply the jam on the tamped cake so that it is one centimeter from the edges.

Roll the remaining chilled dough into a layer that is slightly larger than the previous one and cover the jam with it. Secure the top cake to the bottom. After smearing the surface of the future Breton butter pie with a mixture of egg yolk and water, cook it at 190 degrees for 45 minutes.
