Just half an hour - and amazingly tasty and healthy muffins are already on your table!
It is necessary
- - 1 large and ripe banana;
- - 150 g whole grain flour;
- - 0.75 tsp baking powder;
- - 0.75 tsp soda;
- - a pinch of salt;
- - 150 ml buttermilk;
- - 50 g of Demerara sugar + 1.5 tsp;
- - 1 small egg;
- - 35 g butter;
- - 100 g blueberries.
Instructions
Step 1
Preheat the oven to 180 degrees. We prepare muffin tins: we line them with special baking cuffs or grease them with butter. If you are baking in silicone, you can simply sprinkle it lightly with water.
Step 2
Melt the butter in a water bath or in the microwave and cool slightly. Remove the peel from the banana and knead it with a fork, pusher or blender in mashed potatoes. Separately, sift the flour with baking soda, baking powder and a pinch of salt into a deep bowl. Mix with 50 g of sugar. In the center of the mixture we make a well, where we add the egg, butter and milk. Add banana puree and stir with a spatula. Do not knead for a long time, otherwise the muffins will not be fluffy! Add the blueberries and mix gently again, being careful not to crush the berries.
Step 3
We lay out the dough in the molds, leaving them slightly unfilled. We send to the oven for about 25 minutes: the finished muffins should acquire a golden color and rise, and the match or toothpick should come out of them dry. Ready-made muffins can be sprinkled with 1, 5 tsp while still hot. brown sugar and serve.
