Rice hedgehogs are a type of meatballs. Such a dish can be prepared in a slow cooker for lunch as hot or for dinner, serving it on the table along with a side dish, sauce or vegetable salad.

How to cook minced meat for hedgehogs with rice

Prepare the following ingredients: 600 g minced beef, 300 g minced pork, salt, black pepper, hot red pepper (chili), paprika, bay leaf, 100 g round grain rice, 2 onions, 1 large carrot, 2 tbsp. tomato paste (or fresh tomatoes), 1 egg, sour cream - to taste.

Finely chop the onion, grate the carrots. Pour some vegetable oil into a multicooker and add the onions and carrots. Set the "Baking" mode on the multicooker (for 10 minutes), fry the vegetables with the multicooker lid open. Mix the minced beef and pork with your hands in a deep bowl; after kneading, the mass should become homogeneous. Finely chop the onion and add it to the minced meat, add seasonings to taste. Pour in a third of a glass of warm water and stir again well.

Rinse the rice thoroughly in warm water, pouring it out several times. Let the water drain. Add rice to minced meat, break an egg there, mix everything again. From spices, you can add dried dill, parsley or basil. Leave the minced meat for a while.

Hedgehog rice can be washed cleaner and faster by rinsing it with warm water.

Cooking hedgehogs in a slow cooker

Place tomato paste or finely chopped tomatoes in sautéed onions and carrots. Add clean filtered water to the multicooker, its amount will depend on the size of the hedgehogs - the dish should be completely covered with water. Season the mixture with salt to taste and set the Baking setting for 5-10 minutes.

Make small balls of minced meat while the water is heating in a multicooker. If the minced meat is a little thin, roll the hedgehogs in flour to keep them in shape. The dish can be decorated - roll the backs of hedgehogs in long-grain rice, and make a nose and eyes from peppercorns.

As soon as the water starts to boil, put the balls in a multicooker, put a couple of bay leaves and close the lid. Set the "Baking" mode and cook the dish for thirty minutes, then add sour cream to the dish to taste, turn the multicooker to the "Stew" mode for 1 hour. Serve ready-made hedgehogs and garnish with fresh herbs.

To make the hedgehogs less greasy, you can steam them.

Steamed hedgehogs with rice turn out to be a little dry.

To do this, pour about half a liter of water into the multicooker (up to the bottom mark), install a special grid for steaming and place the formed balls on it. During cooking, excess fat will drain from them.
