Eggplant can be cooked in different ways depending on individual taste preferences. However, this recipe will certainly become an integral part of your culinary "piggy bank", as it has a pleasant taste and is quickly prepared.
It is necessary
- –Fresh eggplants (2 pcs.);
- - garlic (4-6 cloves);
- - liquid honey (2-3 tbsp. L.);
- –Lemon juice (40 ml);
- –Pure water (40 ml);
- - hot red pepper (3 g);
- - ground coriander (4 g);
- –Salt to taste;
- - olive oil for frying;
- –Fill to taste.
Instructions
Step 1
The eggplants should first be thoroughly washed from external contamination and cut into slices no more than 0.8 mm thick. Next, salt the resulting slices well and mix. Wait until the juice comes out of the vegetable, and then rinse. Place the eggplants on a paper towel to dry.
Step 2
Heat a skillet with olive oil, then place the garlic, cut into thin plates. Toast and then remove from the oil. In the resulting garlic oil, brown each eggplant slice. If you prefer low-fat meals, then the fried eggplants should first be laid out on napkins so that excess oil is absorbed.
Step 3
Make the dressing (caramel). In a deep saucepan, combine honey, water, and lemon juice. While heating slowly, the mixture must be gradually brought to a boil. The boiling time should be no more than 5-7 minutes. At the end of cooking, place the fried garlic, pepper and coriander in a saucepan.
Step 4
Put the first layer of eggplant in a deep cup, pouring abundantly with lemon, honey and spices caramel. Next, sprinkle chopped dill on the eggplant and cover again with a new layer. Alternate slices with dressing and herbs. Place the dish in a cold place for 20-30 minutes.
