Vegetable cutlets are no less tasty and healthier than meat cutlets. They can be prepared with many vegetables. Cutlets made from potatoes, cabbage, and zucchini are especially popular. Cauliflower cutlets are very tasty and healthy. There are many recipe options for these cutlets. We offer two options.
First option. When preparing cauliflower cutlets, anyone can use the spices and seasonings they like, thereby enhancing or slightly changing the taste. Cutlets are cooked without oil at all, and therefore, they will be of interest to those who protect the figure. They turn out to be almost dietary and very useful.
Oven-baked cauliflower cutlets
For cutlets you need to take:
- 500 g cauliflower
- 500 ml milk
- 2 chicken eggs
- 100 g rusks
- 100 g bread or rolls
- 2 tbsp. l. flour
- spice
- salt
Preparation
- Wash the cabbage well. Disassemble into inflorescences. Prepare a mixture of 400 ml of water and 400 ml of milk. Put the cabbage there and cook it until cooked, that is, the cabbage should boil well. It will take about 20 minutes. In the rest of the milk, while the cabbage is boiling, put a piece of bread or bread so that it softens well.
- Throw the finished cabbage in a colander. Allow water to drain. Pass it through a meat grinder or turn it into puree with a blender. Squeeze the crumb of the roll or bread and add to the cabbage puree. Beat one egg and pour into the mixture. Pour in seasonings, salt. To make the cutlets more dense, add flour. The flour is given approximately. You can add or subtract it a little. Stir well to get a homogeneous consistency.

Form cutlets. Beat the second egg well. Roll the cutlets in a mixture made from eggs and breadcrumbs. Place in a mold or on a baking sheet, which must be covered with parchment. Bake in a hot oven (180C) for about 40 minutes. In the middle of baking, turn the cutlets.
Cauliflower cutlets with cheese
Option 2. Those who are not satisfied with diet cutlets can cook cutlets in butter.
For this dish you will need:
- 500 g cauliflower
- 2-3 chicken eggs
- about a glass of crackers
- 150 g hard cheese
- spices and salt to taste
- vegetable oil for frying
Cooking process
- Wash the cabbage, disassemble into inflorescences, as in the first case. Boil (5-8 minutes)
- Puree with a blender or your way. Pour in about half of the cooked breadcrumbs in mashed potatoes. Add the rest of the ingredients: eggs, spices, salt and about 2/3 of the cheese.
- The rest of the cheese and crackers will go for breading: grate the cheese and mix with the breadcrumbs.
- Form minced meat patties. Better to do this with wet hands.
- Fry cutlets in a sufficiently large amount of oil. Spread preferably on napkins to remove excess fat.
- Serve with your favorite side dish or as a separate dish.
You can add carrots, onions, garlic to cauliflower cutlets. Fresh herbs will not hurt. You can cook them both from fresh cabbage and from frozen.
