Rabbit meat is easily absorbed by the body, therefore it is rightfully called dietary. Boiled rabbit dishes can be included in the menu for diseases of the gastrointestinal tract and allergies. But baked and stewed rabbit is much tastier, for example, make a stew from it.

Step 1
Peel vegetables and cut onions into half rings, carrots into slices. Chop the garlic. Wash the rabbit and pat dry with a tea towel. Then cut into small pieces.

Transfer the rabbit meat to a stainless saucepan, sprinkle with salt, black pepper, thyme. Add vegetables, bay leaves, minced garlic and mustard. Pour in 3 tablespoons. olive oil and squeeze the juice out of one lemon. Grate the zest and add to the rabbit meat too. Stir the meat with spices and leave to marinate for a day.
Step 3
Heat 2 tablespoons the next day. olive oil in a frying pan, put the marinated rabbit meat, onions and carrots on it, do not take yet. Fry cuts of meat until golden brown on all sides. Transfer to a saucepan to cook the rabbit stew in the oven.
Step 4
Squeeze the marinade and pour it into a saucepan, and fry the vegetables themselves for 5 minutes in the pan where the meat was previously cooked. Add them to the saucepan too and stir in the meat.
Step 5
Cut the second lemon into thin semicircles and place in a saucepan with rabbit stew. Pour chicken stock and bring to a boil on the stove. Transfer the stewpan to an oven preheated to 160 ° C and cook in it for 1.5 hours.
