Sometimes you want to diversify your usual menu and try the dishes of other countries and peoples. In such cases, you can prepare chicken risotto - not difficult to prepare, but at the same time a very tasty Italian dish.

Risotto in Italian means "small rice", and therefore the main and invariable ingredient in it is rice. For the preparation of this dish, rice varieties are used that are rich in starch and are round in shape. For example, Maratelli, Arborio, Padano. There are many variations of the risotto recipe: there are varieties with mushrooms, there are combinations with various vegetables or meat.

You can make risotto with chicken from the following ingredients: four hundred grams of chicken breast, a liter of chicken broth, three hundred and fifty grams of rice (it is advisable to buy a special one for risotto), a glass of dry white wine, a can of corn (about two hundred grams), one hundred grams of Parmesan cheese, a couple of spoons olive oil, two heads of onions, one piece of bell pepper, a pinch of saffron and black pepper, a teaspoon of salt (no slide).

Chop the onion, finely chop the chicken meat, cut the pepper into small squares. Fry the onions in a skillet with butter. Add fillet pieces there and continue to fry, reducing heat. After about five minutes add bell pepper, salt to the meat, mix everything thoroughly. Then add rice and add some of the wine. After the wine has evaporated, pour in the remaining portion. Also, in several approaches, pour hot broth and each time wait for the liquid to be absorbed. At the very end of cooking, add corn, pepper the dish.

Serve hot risotto, sprinkle with grated cheese.
