A wonderful combination of walnut and maple syrup will be appreciated by a sweet tooth of all ages!
It is necessary
- - 600 ml of milk 3, 5%;
- - 100 ml heavy cream;
- - a couple of pinches of salt;
- - 2 cups toasted walnuts;
- - 6 tbsp. Sahara;
- - 8 yolks;
- - 1, 5 cups of maple syrup.
Instructions
Step 1
In a large saucepan, combine the milk and cream and place on the stove over medium heat. While stirring, bring the mixture to a boil and remove from the burner.
Step 2
Separately, with a mixer, mix the yolks with 6 tablespoons of sugar and a couple of pinches of salt until the mixture turns into a creamy mass of pale yellow color
Step 3
Pour the milk-creamy hot mixture to the yolk in a thin stream, while very intensively mixing everything with a whisk. Pour the mixture back into the saucepan and return to the stove over moderate heat. Cook, stirring occasionally, until the contents acquire the consistency of liquid sour cream. Do not boil under any circumstances! Remove from the hotplate.
Step 4
Fill a large saucepan with crushed ice or ice water. Place a saucepan of thickened cream in it and pour in one and a half cups of maple syrup. Cool for 40 minutes, stirring occasionally. This way you will avoid the formation of ice crystals in the dessert.
Step 5
Move the pan with the future ice cream to the refrigerator for about 5 hours for further cooling.
Step 6
Pour the cream into a container for freezing, stir in the fried walnuts (if desired, they can be coarsely chopped with a knife) and put in the freezer until they solidify. In the process, every half hour, the dessert must be stirred (4 times will be quite enough).
