  • - Eggs - 2 pieces
  • - Radish - 5 pieces
  • - Cucumbers - 2 pieces
  • - Kefir -1 liter
  • - Ham 400 g
  • - Salt, pepper to taste

Step 1

Okroshka is served very cold, so prepare ice cubes. Place a sprig of dill or a leaf of parsley in each groove of the ice cube tray, pour boiled water at room temperature and place in the freezer.

Step 2

Wash the potatoes and boil them in their skins. Cool, peel and cut into cubes. Mash one potato a little with a fork, this will add thickness and richness to the okroshka. Also dice the ham (you can substitute it for sausages or boiled chicken). Boil hard-boiled eggs separately. Cool boiled eggs, peel and chop finely.

Step 3

Wash the cucumbers and cut them into cubes. If they have too thick skin, peel them first. Sometimes apples are also added to kefir okroshka. Therefore, if you like sourness, finely chop one apple. Then chop the radishes. Rinse herbs and onions under running water, dry and chop finely. Put all the ingredients for okroshka in a deep plate. Mix thoroughly, salt and pepper.

Step 4

Pour the okroshka with kefir. You can dilute kefir a little with water. You can drizzle lemon juice or add some vinegar. Before serving, okroshka should be infused in the refrigerator for about half an hour. Place a few ice cubes on each plate before serving.
