It is necessary
- - 1.5 kg beef shanks
- - 1 kg of onions
- - 5 cloves of garlic
- - the shins themselves
- - a pinch of ground coriander
- - 1 tbsp. paprika
- - 2 chili peppers
- - a bunch of green cilantro
- - zest of 1 lemon
- - 1 jar of olives
- - black pepper to taste
Instructions
Step 1
Wash the shanks, cut the film in several places so that the meat does not curl when frying.
Step 2
Next, salt and pepper the shanks, sprinkle with ground coriander and paprika, then fry them over very high heat until golden brown.
Step 3
Chop the onion at random and fry until golden brown, at the end toss in the chopped garlic for a few seconds.
Step 4
Put the meat in layers in a saucepan with a thick bottom, put onions and garlic on it.
Step 5
Pour hot water over a saucepan so that it completely covers the pieces of meat.
Step 6
Place the meat over low heat.
Step 7
5-7 minutes before cooking, open the lid, toss in the olives, lemon zest, chopped chili peppers, cilantro and a couple of mint leaves.
