In Mexico, tortillas are considered a national pastry and are used as a base for dishes such as enchilada, burritos, fajitas, tacos, quesadillas, where various fillings are wrapped in a tortilla. A roll with Mexican-style filling turns out to be tasty, satisfying, and also spicy and will please even the most fastidious guests.

- - 100 g grated lemon zest

- - 2 tortillas
- - 140 ml lemon juice
- - 50-80 g parsley
- - 100 g avocado
- - 100 g of natural yoghurt
- - 150 g red sweet pepper
- - 100 ml of olive oil
- - 250-300 g ground beef
- - 50-80 g of canned corn
- - 40-50 g onions
Instructions
Step 1
Heat olive oil in a frying pan and fry the minced meat for 13-14 minutes. Season to taste with salt and pepper, remove from the stove, put in a cup. Peel the avocado, remove the pit, pour lemon juice on top and cut into pieces.
Step 2
Cut the middle out of the red pepper, carefully cut the pepper into thin strips. Rinse the parsley, dry and chop finely. Separate the corn from the liquid.
Step 3
Peel the onion and cut into thin rings. In the same skillet where the minced meat was, add the onion and fry until golden brown for 5-6 minutes. Put the minced meat, fried onions, avocado, corn and parsley in a deep bowl, mix well. Add spices to taste.
Step 4
Stir yogurt with lemon zest. Place 2 tortillas on a tray so that their edges intersect, brush with yogurt. Place the meat filling and sweet pepper strips on the tortillas. Roll the cakes into a roll, wrap with cling film and put in the refrigerator for one hour. Cut the roll into pieces before serving.
