Kibinai is an ancient Karaite dish that is very popular in Lithuania. The pastry is a puff pastry pie stuffed with lamb.
It is necessary
- For the test:
- - 200 g butter (margarine);
- - 2 tbsp. sour cream (kefir);
- - 2 tbsp. flour (sometimes more);
- For filling:
- - 500 g lamb tenderloin;
- - 5-6 pcs. bulbs;
- - salt pepper;
- - parsley, dill;
Instructions
Step 1
Make a dough. Melt butter (margarine), add flour, stir thoroughly, pour in sour cream and knead the dough. Place the kneaded dough in the refrigerator for two hours.
Step 2
According to the classic recipe for "kibinai" puff pastry is required. Therefore, grind flour with margarine (about a quarter of all butter), form a "brick". Cut the dough crosswise and spread it out on the table.
Step 3
Then roll into an envelope with thin edges and a thicker center. Spread it with melted butter, roll it in four, and roll it again. Thus, proceed to get 64 layers and put in the refrigerator. You can use ready-made puff pastry.
Step 4
Prepare the filling. Having cleared the lamb from fat, films, cook for an hour, as for broth. Cut the lamb flesh into tiny pieces, put in a bowl, add the chopped onions and pour in 100 g of broth for the juiciness of the minced meat. Stir the filling, salt and pepper to taste.
Step 5
Roll the chilled dough into a layer, cut it into large squares and spread the minced meat on them. Connect the edges of the dough and pinch with a pigtail. Grease the kibins with yolk and bake in an oven preheated to 170-200 ° C for 30-35 minutes. When the patties are slightly baked, pierce them with a stick in several places and bake for another 10-15 minutes.
