Herring with potatoes is one of the favorite dishes of every Russian. Usually potatoes are served as a side dish with salted herring. However, these ingredients can be combined in a delicious and quirky salad that's easy to prepare.

Ingredients:

  • Herring fillet - 2 pcs;
  • Large head of red onion - 1 piece;
  • Large potatoes - 2 pcs;
  • String green beans - 100 g;
  • Large apple - 1 pc;
  • Vegetable oil - 20 g;
  • Vinegar - ½ tablespoon;
  • Sugar - ½ tablespoon;
  • Low-fat cream - ½ cup;
  • Natural yogurt (unsweetened) - 4 tablespoons;
  • A bunch of greenery;
  • Lemon - 1 pc.

Preparation:

  1. Wash the potatoes and boil them until tender, without peeling them. Allow the potatoes to cool, then peel them and cut into cubes, the sides of which should be about 1 cm.
  2. Then you need to prepare the so-called marinade. To do this, beat the vinegar and vegetable oil, sugar and salt with a whisk in a bowl.
  3. Next, you need to peel the onion with very thin rings. And put the onion rings in the prepared marinade, mix gently. The marinated onions should be left at room temperature for about an hour.
  4. The next step is to prepare a herring potato salad dressing. To do this, rinse and chop the herbs. Cut off half of the lemon and squeeze the juice out of it. Whisk the low-fat cream together with the juice of half a lemon and natural yogurt. Mustard can be added if desired. Add chopped herbs to the sauce, stir thoroughly.
  5. Prepare remaining ingredients and collect salad. First you need to mix the chopped potatoes with half of the resulting dressing and put everything in the salad bowl in which the dish will be served. The potatoes should be soaked in the dressing for 10 minutes.
  6. Rinse the apples and cut into cubes (they must be the same size as the potatoes), be sure to remove the core. Defrost green beans, rinse with cold water and dry.
  7. Check the herring fillet for pits and cut into slices. Put pickled onions, herring, chopped apples and bean feathers in the potatoes soaked in the sauce.
  8. Stir all the ingredients and place them in a nice salad bowl. Drizzle over the remaining creamy dressing.
