Chek-chek is an original dish of the Tatar cuisine, which is an obligatory wedding treat. Nuts with honey, wrapped in a thin sheet of dry fruit marshmallow, are brought to her husband's house by a young wife, as well as her parents.
It is necessary
- - 3 eggs;
- - 25 g sour cream;
- - 400 g flour;
- - 25-30 g of sugar;
- - 1 teaspoon of salt;
- - 1/2 teaspoon of baking soda;
- - a pinch of salt;
- For syrup:
- - 250 g of honey;
- - 100-150 g of sugar;
- - 100 g monpensier (dragee for decoration);
- - 250 g of vegetable oil (ghee for deep fat);
Instructions
Step 1
Place raw eggs in a bowl, add sour cream, salt, sugar, mix everything well. Combine the flour with baking soda and gradually add the flour to the egg mixture. Knead to a soft elastic dough.
Step 2
Divide the dough into 100 g pieces, roll them into 1 cm thick flagella. Cut the flagella into balls the size of a pine nut and fry them in boiling oil (deep-fried), stirring constantly to make them even fried. Finished balls should be yellowish.
Step 3
Pour granulated sugar into honey and boil the mixture in a separate bowl. Determine the readiness of honey as follows: take a drop of honey on a match, if the trickle flowing from the match becomes brittle after cooling, then the boiling should be stopped.
Step 4
You can also check the readiness of the honey in another way: take a boiling mass with a teaspoon and dip it into cold water, if the mass curls into a hard ball and does not spread, then the honey is ready. It is impossible to boil honey for too long, as it can darken, burn and spoil the taste and appearance of the dish.
Step 5
Place the fried balls on a large plate, pour over the honey and stir well. Transfer the Chek-Chek to a plate or tray and with your hands dipped in cold water give it the desired shape: a cone, a pyramid, a star. Decorate with Chek-Chek Montpensier (small lollipops) or colorful dragees.
