Zucchini is truly a versatile vegetable. Many original and delicious dishes can be prepared from it. Zucchini is used to make jam, bake pies, prepare second courses. Preparations for the winter from zucchini are also very tasty. Ukrainian zucchini is a vivid example of an appetizing and original appetizer.
It is necessary
- Products for one liter can:
- 2 kg of zucchini;
- ½ tbsp. vegetable oil;
- 15 g parsley and dill;
- 20 g garlic;
- 2 tsp salt;
- ¼ cup 6% vinegar.
Instructions
Step 1
Zucchini, the diameter of which is no more than 6 cm, thoroughly wash, cut off the stalks and chop into slices about 2 cm thick. Fry the sliced zucchini in vegetable oil until slightly golden and put on a dish in one layer until completely cooled.
Step 2
Finely chop the garlic and grind thoroughly on a board. Rinse the dill and parsley, drain and chop not too finely. Pour oil on the bottom of a dry and clean jar (for this, use the remaining half of the oil, since half was used up during frying), add vinegar, salt, chopped herbs, pounded garlic and tightly put the zucchini circles. The jars should be filled to a level 2 cm below the neck. Cover the jars with pre-boiled lids and then sterilize at 100% temperature. Banks with a volume of 0.5 liters should be sterilized for 10 minutes, with a volume of 1 liter - 15 minutes.
Step 3
After heat treatment, the jars are sealed and, turned upside down, cooled.
