Cod baked with mustard occupies a special place of honor on the menu of every Scotsman. You can serve it to the table with any potato side dish.
It is necessary
- • Fillet of cod on the skin - 800 g;
- • Sweet cream butter - 100 g;
- • Mustard powder - 100 g;
- • Fresh lemon - 80 g;
- • Floral honey - 55 g;
- • Chopped cilantro greens - 10 g;
- • Seasonings, pepper and salt.
Instructions
Step 1
Wash, season, salt and pepper the boneless fillet from the back of the cod. Put on a plate and leave to soak for half an hour.
Step 2
During this time, prepare the form. It should be deep and preferably with a ceramic bottom and removable sidewalls. Grease the form generously with sweet butter. And not only the bottom, but also the side walls.
Step 3
Place the seasoned fish fillets tightly into the mold, taking care not to leave gaps.
Step 4
Wash fresh lemon. Cut off the ends and remove the bones. Grind in a blender.
Step 5
To prepare the filling, mix mustard powder, flower honey and pre-chopped cilantro with chopped lemon in a bowl. Beat thoroughly with a blender. You should get a homogeneous, slightly viscous mass-sauce.
Step 6
Pour the resulting viscous sauce mass with cod, leveling it with a wide knife or spatula. The sauce should cover the fish completely and evenly.
Step 7
Close the dish on top of the prepared fish with metal foil and place for baking for 40 minutes in an oven preheated to 180 degrees.
The fish cooked according to this recipe will turn out to be very juicy with an unusually pleasant and mild taste.
In addition to boiled potatoes, boiled rice can be served as a side dish for Scottish cod.
