"Tenderness" cake is made on the basis of shortcrust pastry and supplemented with creamy sour cream. It is very gentle, soft, melts in the mouth. It tastes like Day and Night cookies. The main criterion for this cake is that you can choose absolutely any cream to your taste.

- - 100 g sour cream 20% or 150 g sour cream 10%;
- - 0.5 tsp vanillin;
- - 1 tsp. soda;
- - 1 tbsp. l. vinegar;
- - 100 g of sugar;
- - 2, 5 - 3 glasses of flour.
- For the cream:
- - 200 g butter;
- - instant cocoa drink for children;
- - 150 g of sugar;
- - 200 g sour cream.

To prepare cakes: take a deep cup of flour and three chilled butter or margarine on a coarse grater into it, dipping butter in flour. Then grind the butter and flour until fine crumbs are formed.

Put sour cream, mix sugar with a spoon, add vanillin, slaked soda with vinegar and mix thoroughly with a spoon, then sprinkle the work surface with flour, spread the dough and knead with your hands. The dough should be soft, slightly sticky to your hands. We put our dough in the refrigerator for 20 - 30 minutes.

While the dough is resting, let's turn to the cream. Put the softened butter in a cup (never melt it), add the instant cocoa drink, sugar and beat with a mixer for 2 - 3 minutes.

Add sour cream of any fat content and beat again until fluffy, homogeneous for about 1-2 minutes. The cream turns out to be airy, light

We take out the dough, divide it into 4 - 5 balls. Roll out each ball, be sure to pierce the cake with a fork.
