- - yolk - 5 pcs.,
- - potato starch - 20 g (1 tbsp. l. without a slide),
- - icing sugar -350 g,
- - protein - 3 pcs.
Instructions
Step 1
Cut the lemons in half and squeeze out the juice. Add cream, lemon juice to a saucepan. Put the mixture over medium heat and, while stirring, bring to a boil (but do not boil!). Remove from heat. Whisk the yolks with starch and powdered sugar (150 g) and add to the cream.
Step 2
Add cream gradually and stir quickly. Put everything on low heat again. When small bubbles appear on the surface of the cream, immediately remove it from the heat and fill it in bowls (heat-resistant), cool at room temperature. Then beat the whites until firm peaks, gradually adding the remaining powdered sugar.
Step 3
Fill the bowl with the resulting mass. Put everything in the oven and grill for no more than 3-5 minutes to brown the whites.
