A great idea for the holiday is the "Nezhenka" cake. Mascarpone cheese in combination with prunes gives an unusual creamy, very delicate taste. The cake is prepared quickly and this is its advantage.
It is necessary
- For the cake:
- - 2 eggs;
- - 6 tbsp. tablespoons of sugar;
- - 2 tbsp. cocoa spoons;
- - 6 tbsp. tablespoons of flour;
- - 2 tbsp. spoons of starch;
- - 2 tsp baking powder;
- - 4 tbsp. tablespoons of vegetable oil;
- - 6 tbsp. spoons of kefir;
- - 200 g of prunes;
- - 50 g of raisins;
- - 200 ml of coffee liqueur;
- - vanillin.
- For the cream:
- - 125 g mascarpone cheese;
- - 2 yolks;
- - 3 tbsp. tablespoons of sugar;
- - 2 tbsp. spoons of brandy.
Instructions
Step 1
Beat eggs with sugar, add vanillin and cocoa.
Step 2
Mix baking powder with sifted flour. Add starch and mix everything. The result is a thick mixture.
Step 3
Then add vegetable oil and kefir, mix until a homogeneous mass is formed.
Step 4
Finally, add pre-steamed and finely chopped prunes and raisins.
Step 5
Grease the mold with butter, pour the dough into it. Bake at 180 degrees for 7 minutes.
Step 6
Prepare the cream. Beat the yolks with sugar, add vanillin, cognac and mascarpone cheese, mix well.
Step 7
Cut the finished cake into two parts, soak with coffee liqueur, let it brew for 20 minutes and coat the cakes with cream. Decorate the finished cake as desired.
